Well I got a NEW job. I loke it so far and have been there a month now. Im the Kitchen Manager and Butcher in Training at a Local Restaurant. The owner has the Restaurant mainly for tax reasons (as his WIFE put it) since he owns like 11 Tire stores accross the Valley so they are NEVER there.Im NEW to the Butcher part as we cut all our own steaks but I`ve done this long enough that I`M catching on pretty quick. Tops,Rib Eyes, New Yorks and Filet Mignon down and all I need is the Porterhouse and T-Bone. Now thos requir the use of the bannd saw and make me a little nervous to say the least but Im sure once i get to it it wont be THAT bad.

Congrats on your new job, butchering isn't hard once you get around it. I used to work with a butcher in a restaurant a couple of years ago. It's not that bad at all.

Thanks for your support guys, i know i havent been on as much or posted for that matter as Id like. Ill try and pop in from time to time, kinda hard when i work 6 days a week and about 50/55 hours. Thanks again. Rudy
